Zucchini Bread

  • 1 3/4 c all-purpose flour
  • 1 t baking powder
  • 1/2 t baking soda
  • 1/2 t salt
  • 1 1/2 t ground cinnamon
  • 1/4 t ground nutmeg
  • 1/2 c vegetable oil
  • 1/2 c packed brown sugar
  • 1/2 c sugar
  • 2 large eggs, room temperature
  • 1/4 c unsweetened applesauce
  • 2 t pure vanilla extract
  • 1 1/2 c shredded zucchini
  1. Preheat oven to 350F.
  2. Grease 9x5in loaf pan.
  3. Whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg together in large bowl.
  4. In medium bowl, whisk oil, brown sugar, sugar, eggs, applesauce, vanilla together. Whisk in zucchini.
  5. Pour wet ingredients into dry.
  6. Gently stir/whisk until just combined; do not over mix.
  7. Spread batter into loaf pan.
  8. Bake 55-70 minutes.
  9. Cool in pan on wire rack for 1 hour.
  10. Remove from pan and continue to cool.
