- 1 3/4 c all-purpose flour
- 1 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 1 1/2 t ground cinnamon
- 1/4 t ground nutmeg
- 1/2 c vegetable oil
- 1/2 c packed brown sugar
- 1/2 c sugar
- 2 large eggs, room temperature
- 1/4 c unsweetened applesauce
- 2 t pure vanilla extract
- 1 1/2 c shredded zucchini
- Preheat oven to 350F.
- Grease 9x5in loaf pan.
- Whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg together in large bowl.
- In medium bowl, whisk oil, brown sugar, sugar, eggs, applesauce, vanilla together. Whisk in zucchini.
- Pour wet ingredients into dry.
- Gently stir/whisk until just combined; do not over mix.
- Spread batter into loaf pan.
- Bake 55-70 minutes.
- Cool in pan on wire rack for 1 hour.
- Remove from pan and continue to cool.
