Apple Cinnamon Banana Bread

  • Buttermilk ingredients
    • 3/4 t vinegar (in 1/4 c measurer)
    • rest of 1/4 c milk
  • Dry ingredients
    • 2 c flour
    • 3/4 c sugar
    • 3/4 t baking soda
    • 1 t cinnamon
    • 1/2 t salt
  • Wet ingredients
    • 1 1/2 c mashed overripe bananas
    • 2 large eggs
    • 6 T butter, melted and cooled
    • 2 t vanilla extract
  • Apple ingredients
    • 1 cup finely diced apples
    • 1 T flour
  • Optional
    • 1-2 handfuls crushed walnuts
  1. Combine milk and vinegar and let sit 5 minutes (buttermilk substitute).
  2. Peel, slice, and dice apple. Mix with 1 T flour to coat apple chunks.
  3. Preheat the oven to 350F.
  4. In a large bowl, whisk together dry ingredients.
  5. In a medium bowl, whisk together wet and buttermilk ingredients.
  6. Add the wet ingredients to the dry ingredients and stir to combine.
  7. Fold apples into bread mix.
  8. Spray metal bread pan with oil and pour in batter.
  9. Bake 55-60 minutes*.
  10. Let bread cool 10 minutes then remove to cooling rack.

2025-05-03: I found this needed about 65 minutes to bake, and was quite dense.
