- 2 T olive oil
- 1/2 yellow onion, diced
- 1 1/4 c cooked, drained brown lentils
- 1 1/4 c cauliflower rice
- 1 t cumin
- 1 t salt
- 1/2 t garlic powder
- 1/2 t paprika
- 1/2 t oregano
- 1/4 t chili powder
- 1/4 c vegetable broth
- 3 T worcestershire sauce
- 1/2 c (~5 oz) tomato paste
- In large pot, heat olive oil and stir fry onion until fragrant, 1-2 min.
- Stir in lentils and cauliflower rice and stir fry 1 min.
- Stir in cumin, garlic powder, paprika, oregano, salt, chili powder.
- Stir in tomato paste, vegetable broth, worcestershire sauce.
- Reduce heat and simmer 5-6 min until mixture thickens.
