Lentil Cauliflower Taco Meat

  • 2 T olive oil
  • 1/2 yellow onion, diced
  • 1 1/4 c cooked, drained brown lentils
  • 1 1/4 c cauliflower rice
  • 1 t cumin
  • 1 t salt
  • 1/2 t garlic powder
  • 1/2 t paprika
  • 1/2 t oregano
  • 1/4 t chili powder
  • 1/4 c vegetable broth
  • 3 T worcestershire sauce
  • 1/2 c (~5 oz) tomato paste
  1. In large pot, heat olive oil and stir fry onion until fragrant, 1-2 min.
  2. Stir in lentils and cauliflower rice and stir fry 1 min.
  3. Stir in cumin, garlic powder, paprika, oregano, salt, chili powder.
  4. Stir in tomato paste, vegetable broth, worcestershire sauce.
  5. Reduce heat and simmer 5-6 min until mixture thickens.
