Grilled Salmon with Pineapple Salsa

  • Salmon:
    • 12 oz salmon fillet
    • 1 t olive oil
    • 3/8 t cayenne pepper
    • 3/4 t chili powder
    • 3/4 t garlic powder
    • 1/4 t salt
    • 3/8 t black pepper
    • 3 T lime juice
  • Salsa:
    • 3 c chopped pineapple
    • 3/4 c finely chopped red onion
    • 3/8 c finely chopped cilantro
    • 1 jalepeno, chopped
    • 3 T lime juice
    • 3/4 t chili powder
    • 1/4 t salt
    • 1/4 t black pepper
  1. Preheat grill to medium-high heat and oil grates.
  2. Coat salmon with olive oil and season evenly with remaining seasoning ingredients other than lime juice.
  3. Cook 6-8 minutes skin down and another 2 minutes flipped.
  4. Combine salsa ingredients in medium bowl.
  5. Squeeze lime juice on salmon.
