Walnut Mushroom Taco Meat

  • 2 c walnuts
  • 8 oz mushrooms, cleaned and de-stemmed
  • 1 T soy sauce
  • 1/2 yellow onion, finely diced
  • 1 T tomato paste
  • 2 cloves garlic, minced
  • 1 T chili powder
  • 1 t cumin
  • 1/2 t smoked paprika
  • 1/4 t cayenne
  1. Pulse mushrooms and walnuts in food processor.
  2. Saute onions in olive oil 3-4 minutes.
  3. Stir in garlic and cook another 30 seconds.
  4. Add walnut mushroom mixture and cook about 5 minutes stirring occasionally.
  5. Add tomato paste, soy sauce, and spices. Stir well.
  6. If mixture is dry add water or broth to moisten.
