- 2 c walnuts
- 8 oz mushrooms, cleaned and de-stemmed
- 1 T soy sauce
- 1/2 yellow onion, finely diced
- 1 T tomato paste
- 2 cloves garlic, minced
- 1 T chili powder
- 1 t cumin
- 1/2 t smoked paprika
- 1/4 t cayenne
- Pulse mushrooms and walnuts in food processor.
- Saute onions in olive oil 3-4 minutes.
- Stir in garlic and cook another 30 seconds.
- Add walnut mushroom mixture and cook about 5 minutes stirring occasionally.
- Add tomato paste, soy sauce, and spices. Stir well.
- If mixture is dry add water or broth to moisten.
