This is based on Brew 55 – Oak-Aged Vanilla Stout with the hazelnut addition.

- 2020-12-31 – I had 1.6 oz of american oak cubes (heavy toast) left over that I soaked in 1/2 cup of Ezra Brooks Bourbon Whiskey.
- I cut 5 vanilla beans in half and scraped out their insides and soaked the insides and bean shells in 1/2 cup of bourbon.
- Vanilla beans were from https://www.amazon.com/gp/product/B07TBBS51M/ref=ppx_yo_dt_b_asin_title_o03_s00?ie=UTF8&psc=1 ($11.04).
- Hazelnuts (filberts) were from Harvest Health grocery store in Hudsonville ($11.04, 0.995 lb total).
- Beer ingredients were from Brewers edge ($56.07).
- Bourbon was from Repetes party store on Riley ($18.75).
- I was out of Whirlfloc so I didn’t use it.
- Started steep at 164F, used the large muslin bag.
- Removing the bag removed a lot of water but I did not refill it this time.
- I started roasting the hazelnuts at 200F but it was taking too long. I increased to 350F after about an hour. Then they were done within 15 minutes or so. Next time probably just start at 350F. After rubbing skins off, I put them in a 1qt pyrex container and covered with around 400mL of Ezra Brooks bourbon.
- 2021-01-10 Poured all of bourbon + vanilla beans, oak cubes, and hazelnuts into secondary and racked on to everything. Volume was about 5 gallons. I forgot I was going to hold off on adding the oak cubes but since it’s only 1.6oz and I plan on doing a shorter time in the secondary I think it will be ok.
- 2021-02-08 After in the keg over a week this one is good but not what I was going for. The bourbon is too strong; I think I included too much bourbon. The vanilla is good but I could possibly use more. The hazelnut doesn’t come through strongly enough.
