Veggie Sandwich

  • 2 slices bread
  • 1/3-1/2 large avocado
  • 1 small roma tomato (sliced)
  • red onion (few slices)
  • cucumber (few slices)
  • lettuce or baby spinach
  • hummus
  1. Lightly toast bread.
  2. Spread avocado on one bread.
  3. Spread hummus on the other.
  4. Layer all veggies.
