Bean Dip

  • 16 oz can refried beans
  • 4 oz cream cheese, softened
  • 1/2 c sour cream
  • 1 T taco seasoning
  • 1 large jalepeno, diced
  • 4 oz can diced mild green chilies, drained
  • 2 green onions
  • 3 c shredded cheddar cheese
  1. Preheat oven to 375F.
  2. Thinly slice green onions and separate white and green portions.
  3. In medium bowl, combine cream cheese, refried beans, sour cream, and taco seasoning with a hand mixer until fluffy.
  4. Fold in white portion of green onions, jalapenos, chilies, and 2 c of cheddar cheese.
  5. Spread into 8×8 baking dish.
  6. Top with remaining 1 c shredded cheddar cheese.
  7. Bake 20-25 minutes until hot and cheese is melted.
  8. Sprinkle remaining green onions on top as garnish.

Notes:

  • Made 2024-05-04. It was good but didn’t have a ton of flavor. Maybe add salsa, chili, onions, more taco seasoning?
